Royale Splendid Paste with Yolk
If the texture of lotus paste is bad or the chef is not skillful enough, the yolk cannot be wrapped nicely with paste.

The word "SPECIAL" applies to the pastry, lotus paste, slated egg yolks, temperature and skill. The perfectibility will give you lots of beautiful memories. The standard weight of a mooncake is six tahil. This miniature is small in size but excellent in quality. With a weight of 2 1/2 tahil. this exquisite mooncake is a superb.

Pure Lotus Paste
Each year, Oversea leaves behind lots of old memories on the day when members of the family gather under the moon, having mooncakes in the garden. Lotus is the soul of mooncake. The aroma of lotus is light and contemplative. Remove the peel of lotus, clean and boil until it is cooked. Then, grind and simmer lotus until it turns to a thick fluid, add in ingredients to become lotus paste.

淨素蓮蓉
蓮蓉是月餅的靈魂, 蓮花的香, 香幽遠. 蓮花的清, 清悠閑. 去蓮子皮, 洗蓮子身
, 煮熟蓮子, 磨成蓮粉, 熬成蓮漿, 制成蓮蓉. 純純的蓮蓉, 不滲其他, 清清一粒

Lotus Paste with Single Yolk
Add sugar in water and melts with low heat to produce a moist pastry. If pastry is too thick, it cannot stick with the paste. If the pastry is too thin, the paste will leak out of the pastry. Wrapped paste tightly with pastry. Insert one yolk in the middle of the paste and bake. This is the Oversea Lotus Paste with Single Yolk Mooncake.

單黃蓮蓉

Lotus Paste with Double Egg Yolks
Salted egg yolk is just adding good to excellence in the process of making mooncakes. Clean yolks carefully and then slightly brown them with low heart to dry. Press in each cake with two yolks and bake until it turns reddish.

雙黃蓮蓉
餅皮是衣裳, 添月餅五顏六色. 蓮蓉是骨肉, 潤月餅國色天香. 咸蛋是臟腑, 增月

Red Bean Paste
Sweetness is like the feeling of river water flows through a valley. If you can't imagine it, try one. Grind "Thian Jing" red bean, then cook them with a wok into black wave paste.
